A Recipe for: Chicken Vegetables with Almonds:
Hello there Readers. Today I am giving you another easy peasy recipe that I’ve sort of made up by picking my way through various restaurant recipes and based on how my family reacts to certain foods.
This is a great Chinese style dish that is served with Garlic rice the recipe of which you can find here:
And is a plethora of colors and crunchy tasting veggies with toasted Almonds to give the dish a yummy twist.
So read on…
Chicken Boneless Chopped in 1 inch Cubes: ½ KG
Onions Chopped in Squares: 2
Green Bell Pepper chopped in Squares: 2 medium
Carrots cut Round: 1 large
Mushrooms Chopped: 1 can
Knorr Chicken Cubes: 2
Green Chilies: Thinly cut
Oil: 14 Cup
Salt and Pepper to Taste
Almonds peeled: ¾ Cup
Take a Wok and add some oil to it. Add the chicken and cook lightly. Add the mushrooms, carrots, green chilies and chicken cubes. Stir till chicken is done and cubes have dissolved. Add 2 to 3 cups of water and let it simmer for 2 minutes. While simmering add salt and pepper to taste keeping in mind that the cubes have already added seasoning to the dish.
Side by side in a frying pan add 1 table spoon of oil and roast the Almonds on medium heat.
Add the rest of the veggies to the Wok. Cook for 1 or 2 minutes and no more otherwise the veggies will lose their crunchiness. Add a little corn flour to the dish if you like the consistency thick. Serve in dish and garnish with the Almonds.
